Cook with Me | My favorite kale salad!
This recipe is by far my favorite way to eat kale! It’s yummy combination of sweet, tangy and savory tastes makes this refreshing salad perfect to make for the summer. Brenda’s Kale Salad ~ Serves 3-4
6 cups of kale, chopped (use kitchen scissors to cut into smaller pieces)
1/2 lemon, juiced
3/4 cup dried cranberries
1/2 teaspoon of sea salt (or less if you prefer, some will go in the water for the quinoa)
ground pepper, to taste
1 tablespoon of olive oil
top off with your favorite protein
1 parts quinoa, 2 parts water ~ In this video, I did 1/2 cup quinoa with 1 cup of water and a sprinkle of sea salt.
